HUMMINGBIRD CAKE

2 C. SUGAR

2 C. FLOUR

1 tsp. SODA

1 ½  tsp. CINNAMON

1 tsp. SALT

3 EGGS, BEATEN

1   8oz. CAN CRUSHED PINEAPPLE,DRAINED

1 ½ C. OIL

1 tsp. VANILLA

2 C. BANANAS, CHOPPED

2 C. NUTS, CHOPPED

MIX SUGAR, FLOUR, SODA, CINNAMON AND SALT TOGETHER.

ADD EGGS, PINEAPPLE, OIL, VANILLA, BANANAS AND NUTS INTO

MIX. PUT IN GREASED 9X13 PAN. BAKE AT 350* FOR 30 MINUTES.

 COOL……….USE GERMAN CHOC. ICING FOR TOPPING.

RUBARB CAKE-JELLO

4-6 CUPS RUBARB                               9X13 CAKE PAN

MIX; 1/3 C. SUGAR

           1 PKS 3 oz.  RASBERRY JELLO

            1 WHITE CAKE MIX

POUR OVER RUBARB…………………..

 POUR 1 CUP WATER OVER MIX AND 1/3 C. MELTED BUTTER.

BAKE AT 350* FOR 1 HR.

     (YOU CAN USE ANY BERRY  OR FRUIT JELLO )

SALSA DIP

4- Med.  size Ripe Tomatoes (sprinkle with salt/pepper after chopping)
4 to 6 Jalopenia pepper shells only. (no seeds) finely chopped
2 Juiced limes
1 Tsp. Garlic (minced)  -or-  2 cloves (chopped)
1 Med. onion (chopped fine)
1 tbs. Olive Oil
Celentro (fresh) to taste

Chill for 3-4 hours to juice and marinate

Serve with chips....    or use on Chili....   mmmmmmmmmmmmmm....  good


 
 
BEAU MONDE'  DIP
 
2 cups Hellmann's Mayonnaise
2 cups sour cream
2 tablespoons dehydrated onions
2 teaspoons Beau Monde'
 
For best results this dip should be made at least 12 hours before serving.   In two quart mixing bowl, thoroughly blend mayonnaise and sour cream.  Measure dry ingredients and blend with mayonnaise mixture.  Refrigerate overnight.  This dip is absolutely wonderful served with raw vegetables or rippled chips.  Enjoy!

CROCK POT PIZZA

 1 – 8 oz. pkg. Kluski noodles

1 med. Onion chopped

1 ½ lbs. hamburger or sausage (or mixture of both)

1 large jar spaghetti sauce

1 small jar pizza sauce

8 oz. shredded cheddar cheese

8 oz. shredded mozzarella cheese

cook and drain noodles    set aside

brown hamburger/sausage and onions and drain   -  add sauces and mix well.

Starting with the noodles,  make two layers in large crock pot or casserole dish
noodles  - then meat sauce  - then cheeses.  

 You can add any other pizza toppings of your choice  -  Pepperoni, green peppers,  black olives  etc.  Add these as you layer the other ingredients. 

 Bake in crock pot on low for 2 – 3 hours   OR   in the oven in casserole at 350 for 20 – 30 minutes.

  "Omelet In A Bag".

Add these ingredients to a zip lock bag,
Insert two eggs plus a touch of milk or water (artificial eggs work too), cheese, bacon bits, ham, mushrooms, broccoli, chopped onions, etc.
 Seal it ....(knead the bag to break the yokes and mix), 
Place bag in boiling water for approximately 12 minutes.
Soon a perfect omelet rolls out of the bag.
For a large crowd, having several pots of boiling water speeds up the preparation.

Butter a cereal bowl.... 
Break in two eggs....  
Whip with a fork, (be sure yolks are broken)..  (Cover with paper towel since it may spatter a little),    
Microwave it....  season to taste.       
Makes a perfect sandwich sized egg sandwich.

FRESH APPLE CAKE

 3 cups all-purpose flour

1 teaspoon salt

1 teaspoon soda

1 teaspoon cinnamon

2 cups sugar

1 cup cooking oil

2 eggs

3 cups raw apples diced

2 teaspoons vanilla

1 cup walnuts (optional)

 

Combine flour, soda, salt, and cinnamon.   Add all other ingredients and mix well.  Add nuts last.  Bake at 350 for 30 – 40 min.  in  9x13 pan.

HOT COCOA MIX

 

1 – 8 quart box dry milk

1 – 6 oz. jar coffee mate

1 lb. can Nestlé’s Quik

1 cup powdered sugar

 

mix together in large container   

stir 1/3 cup of mix into cup of hot milk or water

add marshmallows if desired

GREEN TOMATO PIE

 

1 ¼ LBS. GREEN T0MATOES

                OR 3 ½ CUPS SLICED

¼ CUP SEEDLESS RAISINS

1 ½ TBSP. LEMON JUICE

1 TBSP.CIDER VINEGAR

½ tsp. SALT, SCANT

1 ½ CUPS SUGAR

3 TBSP. FLOUR

½ tsp CINNAMON

1 tsp.. APPLE PIE SPICE

( OR- SPICE TO TASTE)

2 TBSP. MARGARINE

 

HEAT OVEN TO 425* --- IN LG. BOWL, BLEND SUGAR,FLOUR,& SPICES

STIR IN LEMON JU. & CIDER VINEGAR. BLEND IN RAISINS, THEN

VERY THIN SLICED TOMATOES. PUT IN PIE SHELL, BAKE FOR 35 MINS.

OR TILL DONE.
